Has anyone dealt with something like this? I'm not sure what my options are.

contract has unconscionable terms. I've been dealing with this for about 10 weeks now and the situation isn't improving.

The contract was signed 20 months ago. I am not sure I have the original signed copy. The total amount in dispute is approximately $124,000.

What are the risks if I pursue this? What's the likely timeline?

This happened to me too. Have you tried filing a complaint with the relevant agency? In my case they investigated and it got resolved without needing a lawyer.
